I absolutely love making vegan and vegetarian charcuterie boards! They are inspired by my never-ending love of snacking.
This whole food plant based recipe is filled with all of my favorite fresh foods. It's the perfect vegan snack or appetizer to bring along to an event that everyone will love, whether they are plant-based or not.
This is a great opening act for some of my other favorite recipes, like my Vegan Pumpkin Chili or my Pumpkin Pasta Sauce.
Ingredients
Fruits: I like to use a large amount of fresh fruits on my snack platters. This brings along sweet flavors and such a bright pop of color. Berries and sliced apples and peaches are always great additions.
I also like to add dried fruits like dried mango, dried pineapple, etc. for extra variety.
Vegetables: Fresh veggies are usually the second most used food on my vegan charcuterie boards. Slice your vegetables up so they are easy to grab, dip in hummus, and enjoy!
Nuts and Seeds: These will add great crunch and texture.
Hummus: Bring along your favorite hummus brand and flavor to dip your pita chips and vegetables in. You can also sub in a dip in place of the hummus.
Pita Chips: I love using pita chips to add more of a hard crunch. Pick your favorite flavor! You can also substitute or add pretzels or crackers.
Agave Nectar: This plant-based alternative to honey is great for adding a little sweetness to your fruits, veggies, vegan cheeses, and more. Plus, I love any excuse to use my adorable little honey dipper.
Vegan Cheese: Using a vegan cheese is a great way to add more of a charcuterie feel. You can get all kinds of different flavors and textures that are perfect for spreading and snacking! This article talks all about the best vegan cheeses.
How to Make a Veggie Board
Wash and dry all produce and arrange on a large tray, plate, or board.
If I'm making and eating this grazing board at home I like to use a flat marble board. If I'm bringing the veggie board somewhere and need to transport it, I like to use a platter or tray with a bit of a lip so that nothing falls off during transportation.
When assembling and arranging the board try your best to spread things out so you don't have all of your fruits or vegetables on one side. With that being said, keep foods in clusters. So make lots of little clusters of food groups all around the board, mixing different foods, textures, and colors of groups.
There should be a wide variety of colors, flavors, and textures all over the board. Make things equally delicious and visually pleasing for your guests.
Finish the dish by creating a visually pleasing statement and garnishing with fresh herbs. When it comes to herb selection, I love using mint, rosemary, and basil. You can also add more pops of green by leaving some of the stems on your strawberries, carrots, etc.
Substitutions and Tips
The best part about this grazing board recipe is that you can mix and match all of your favorite foods and flavors. You can also leave out any foods that you don't love.
This grazing platter is vegan, gluten-free and filled with raw, whole foods. Make small changes throughout your board to make this recipe allergy friendly, or to fit your diet of preference.
Use a Variety of Foods: The biggest tip I can give you is to add as many flavors and textures as possible when creating your vegan boards. This makes things tasty, colorful, and really fun!
Utilize Containers: Take advantage of small bowls or containers to help contain and section off smaller foods or liquid/creamy foods on your board.
An example of this would be using a small dish for agave nectar or hummus. I also like to use a small container for things like blueberries and sometimes nuts.
This helps to keep your vegetable charcuterie board nice and organized.
Garnish: I love using fresh herbs such as mint, rosemary, or basil to garnish my snack boards. This will add a fresh, bright, pop of color into your grazing board.
When to Serve
- Entertaining & Hosting: If you're hosting an event, this veggie board makes a great appetizer for guests to graze on.
- Movie Night: This is the perfect whole food plant based recipe to snack on during a movie at home. Pair with your usual popcorn and you'll have a new and exciting treat.
- Bring to an Event: If you're looking for an easy appetizer to bring to a gathering, look no further. This vegan and vegetarian charcuterie board has something for everyone.
Storage
Another great feature of this snack board or appetizer board, is that you can store the leftovers in the fridge for later.
Use the leftovers for a readily available snack, pack them in school or work lunches, or bring the entire tray back out later for round two of snacking!
Be sure to store the fruits, veggies, and any refrigerated foods back in the fridge in an airtight container.
If you use any nuts, chips, pita chips, or crackers on your board, seal them in a bag or another airtight container before returning them to the pantry so they don't become stale.
